Mini Meatloaf Recipe
This recipe is a make ahead recipe. You make the mini meatloaves in a muffin pan and put them in the freezer. Then pull out and warm up when you need a quick meal, without all the preparation time of making them from scratch.
What You Need:
1/2 C milk
3/4 C bread crumbs, soft
1 t salt
1/4 t pepper
1 lb ground chuck (or you could use ground Turkey)
How to Make It:
Beat egg slightly in a large mixing bowl.
Carefully stir in the milk.
Add the breadcrumbs and mix.
Sprinkle in the salt and pepper.
Add the ground chuck and mix well with hands or spoon to completely combine.
Preheat oven to 350 degrees.
Spray each cup of a muffin tin with a non stick cooking spray.
Fill each cup with the meat mixture.
Bake 30 minutes or until the meatloaves are done
Remove pan from the oven and allow to cool 10 minutes
Remove muffins from pan and cool completely on a wire rack.
Place in a single layer
Place in single layer on baking sheet; freeze 1 hour
Transfer to an airtight container
Freeze for up to 1 month
To reheat, remove muffins from freezer.
Thaw out in the refrigerator
Preheat oven to 375 degrees.
Place muffins on a cookie sheet.
Bake 20 minutes to 25 minutes until heated through
